Founder and owner Hade Van Vaerenvergh hails from Bruges, Belgium, and brought with him a family-recipe legacy that began with a humble waffle cart in Salt Lake City in 2004. What started as a nostalgic homage to the flavors of home soon evolved: waffles expanded into frites, sauces, sandwiches, and ultimately a full bistro with multiple locations and mobile food-truck service. Pierre’s story is rooted in craftsmanship, authenticity and heart — his vision was never just about serving food, but about sharing a piece of his heritage with his adopted community. Today, Bruges Belgian Bistro stands as a testament to his dedication: combining Belgian tradition, Utah entrepreneurship and a personal promise of quality in every dish.
