Bruges Belgian Bistro brings Belgium’s beloved street-food classics straight to the streets of Utah. With two vibrant food trucks on the move, we serve golden-twice-fried Belgian frites with an array of unique house-made dipping sauces, alongside Liège waffles made with imported Belgian pearl sugar, caramelized and crispy in every bite. From savory “Machine Gun” sausage baguettes loaded with fries and Andalouse sauce, to sweet waffles topped with fresh fruit, chocolate and whipped cream, our mobile kitchen offers something for every craving. Whether you catch us at a food-truck event, corporate lunch, festival or private catering, our mission remains the same: deliver genuine Belgian flavor with casual flair, handcrafted quality, and a side of fun.

Meet Hade Van Vaerenvergh

Founder and owner Hade Van Vaerenvergh hails from Bruges, Belgium, and brought with him a family-recipe legacy that began with a humble waffle cart in Salt Lake City in 2004. What started as a nostalgic homage to the flavors of home soon evolved: waffles expanded into frites, sauces, sandwiches, and ultimately a full bistro with multiple locations and mobile food-truck service. Pierre’s story is rooted in craftsmanship, authenticity and heart — his vision was never just about serving food, but about sharing a piece of his heritage with his adopted community. Today, Bruges Belgian Bistro stands as a testament to his dedication: combining Belgian tradition, Utah entrepreneurship and a personal promise of quality in every dish.
